IMG_20131217_104554Just made these this morning and thought I’d pass along the recipe.

1/2 Cup Butter, softened

1 Cup Brown sugar

3 ripe Bananas

2 eggs

1/4 Cup Sour Cream

1 tsp Vanilla

1 1/2 Cups Flour

1 tsp Baking Soda

1 1/2 tsp Baking Powder

dash of salt

Preheat oven to 350 degrees.

Cream together the butter and sugar. Add bananas, eggs, sour cream and vanilla. Mix dry ingredients together in a separate bowl–then add to banana mixture. Pour into lined muffin tin. Bake 20-22 minutes.

*I often add chopped pecans or walnuts…depends on who is going to eat them!

Makes 18 muffins.
