It’s that time of year! Soup Time!
Here’s my taco soup recipe:
2 pounds ground beef (or ground chicken or turkey works great too!)
1 small onion, diced
2 cans Black beans, drained
1 cup of frozen sweet corn
2 cans diced tomatoes
2 cans diced tomatoes with chilies (Rotel)
1 package taco seasoning
1 tsp garlic salt
1 tsp onion powder
1/2 tsp dried dill
1 tsp parsley
1/4 tsp pepper
1 can (4oz) diced chilies
Brown ground beef and drain. Add remaining ingredients in large stock pot, bring to a boil. Then simmer about 20 minutes.
Serve with grated cheese and corn chips.
Also easy to throw all the ingredients (after meat is browned & drained) into a crock pot and cook on low for about 3 hours.
